Abstract

This research was carried out by the author at the Grand Mercure Hotel Medan Angkasa which is located on Jl. Sutomo No. 1, pioneer, Kec. Medan Team., Medan City, North Sumatra. Groceries inventory is a very significant asset because, the correct availability of groceries can make production work run more smoothly without any problems. If there is a vacancy in the supply of groceries, the smooth production process will be hindered. Meanwhile, if there is a lot of inventory, it will cause a surplus of goods, because the company will spend a large amount of funds on availability costs. This research was conducted with the aim that the authors would find out whether the Grand Mercure Hotel Medan Angkasa carries out grocery inventory control properly. The type of method used by the author is a quantitative method. By using the Economic Order Quantity (EOQ) method, it can be expected to further minimize costs, both ordering costs and storage costs. The purpose of this method is to be able to find out how many orders, how many times an order is made, and what the cost of the order is. The number of calculations proves that the number of purchases of EOQ Koko Crunch is 651 packs, the frequency of purchases is 21 times. Calculations using the EOQ have made the number of order levels more ideal, so with that amount the inventory of groceries in the store is more appropriate. This is done so that the number of purchases and the amount of use are balanced, in order to avoid excess grocery items in the store.
